Because Christ kept the laws, Paul kept the laws, and so did the disciples of Christ. If we are to follow in Christ's example, then we would keep the laws, statutes, and commandments as well. They are not "Jewish" laws, the Israelis follow Talmud not Torah. See my first article for more info.
Christ's sacrifice was an atonement for sins and the reason for the disannulment pertaining to the Levitical priesthood and animal sacrifices outlined in the Book of Hebrews. However, the new covenant did not abolish the entirety of the law, nor the volume of the book. That's why God says, "For I am the Lord, I change not..." (Mal 3:6)
